Quinoa Cake

02 Jul

Do you like quinoa? I do 🙂 Quinoa is the grain-like plant, although most think that quinoa is a grain, it’s actually a seed. Quinoa hails from the Peruvian Andes where it was loved and cherished by the Incas over 5,000 years ago. The crop was sacred and even considered the “gold” of their society. When the Spanish arrived, everything changed. They looked down on quinoa as “the Indian’s food” and suppressed the cultivation of the crop.

Quinoa is gluten-free and considered easy to digest. Quinoa grains contain essential amino acids like lysine and good quantities of calcium, phosphorus, and iron.
Now let's get back to the recipe.

  • 200g quinoa (cooked)
  • 150g flour
  • 3 eggs
  • 150g sugar
  • 1 pack baking powder
  • lemon juice (of 1 lemon)
  • 2 pack vanilla sugar
  • 80 g butter

For the strawberry sauce:

  • 200g strawberries
  • vanilla sugar or honey
  • lemon juice

Cook quinoa for 15 minutes. Let it cool. In a bowl whisk eggs, sugar, butter, lemon juice, then sieve in the flour and baking powder, then mix all the ingredients into a smooth batter. Grease a baking pan and pour batter into the pan. Bake it until light brown.
Let it cool and serve with strawberry sauce. Enjoy!
