This is one of my favorite deserts.
- 200 g of grounded biscuits
- 100 g of butter
- 300 g of cream cheese (or you can use sweet cheese)
- 120 g of powdered sugar
- 250 ml sweet cream
- 1 tablespoon of lemon juice
- 2 packs of powdered gelatin
- 300 g of cherries
- 200 ml of juice or water
- 4 tablespoons of sugar
Combine crushed biscuits and butter into a compact mass. Put the mixture at the bottom of the mold. In an appropriate bowl put the cheese and the powder sugar, mix a bit, then add lemon juice. Whip up the cream separately and blend it with the cheese mixture. Prepare one pack of gelatin according to the instructions on the package. After the gelatin has set for a while, place it into a small saucepan and heat until the gelatin melts. Pour the melted gelatin in the cheese mixture and stir. Pour the prepared mixture in the mold over the biscuits. Place it in the fridge to cool down.
In the meantime prepare the cherry topping.
Cover the cherries with water and with sugar. Let it cook over fire for 10 minutes. When it's cooled a bit add the gelatin mixture. Stir and set aside for 10 minutes to cool down. After it had cooled pour it over the cheesecake and place back in the fridge for further cooling.
It is the best to prepare this cheesecake one day early.
