Ingredients:
- 4 medium size zucchini
- 3-4 clove garlic
- 200 ml milk
- 80 g Parmesan shaving or Swiss cheese
- 50 ml extra virgin olive oil(aprox)
- fresh basil leaves
- salt
I made this Pesto many times and I am delighted how tasteful and easy to make it is. Here is the process:
Peel and cut the zucchini. Put into a pan with olive oil, cover the dish with a lid, mix it from time to time. Let it boil over a mild fire. When the zucchini is almost ready(soft) add the chopped garlic and the basil leaves. Boil it for 2 more minutes, then add the milk and boil 5 more minutes. Switch off the fire. Let it cool for a while and after that put it into the blender to mix. Then put it back into the pan and add the Parmesan and salt. Boil it 2-3 minutes and your pesto is ready! 😀
My recommendation is to serve it with pasta, or…I give myself freedom to say as a fondue 🙂

Similar to your recipe. Instead of zucchini – mushrooms and all is almost the same… Just you can use mixture of herbs like: thyme, parsley, basil…, white wine. 🙂
