Eggplant sofas

  • 2 eggplants
  • 400 g of small tomatoes
  • Kashkaval
  • 1 head of onion
  • oil
  • salt
  • pepper
  1. Cut the eggplants in half, hollow them, salt them and wait for the juice to come out.
  2. Dice up the core and mix it over the fire for about 10 minutes, with the finely copped garlic and a spoon of oil.
  3. When the eggplant cores are done, add the tomatoes (both chopped). Keep mixing for 10 more minutes over the fire.
  4. Fill the hollowed eggplants with this mix (after it's cooled a bit), and put the slices of Kashkaval on top. Bake it in the oven for about 30 minutes.

    my friend met us at the park today and she had with her granola mixed with yogurt… I mentioned this recipe to her… I imagine she will give it a try sometime, too.
